Ker želimo svojim gostom približati to tradicijo in znanje, smo pripravili širok izbor slovenskih vin iz vseh vinorodnih okolišev Slovenije, vključno s slovenskimi avtohtonimi vini in avtohtonimi slovenskimi sortami grozdja.

The wine list is our tribute to all the winemakers in the ethnic territory of Slovenia. It is a tribute to their work and expertise and, above all, a tribute to the winegrowing and winemaking tradition of all the generations of Slovenians, who have been producing wine on Slovenian soil for centuries.

With the aim of making our guests familiar with wine–related knowledge and tradition, we have prepared a wide selection of Slovenian wines from all wine–growing regions and wine districts of Slovenia, including Slovenian wine specialties such as Teran and Cviček, as well as almost all indigenous Slovenian wines.

Special attention has been devoted to orange wines, i.e. white wines with prolonged maceration, and wines made by means of biodynamic methods, which have created a whole new story in the world of wines over the past few decades.

najbolj trajnostna oblika vinoreje.

The very first wine was most likely made in much the same way orange wines are produced today. The history of winemaking goes back thousands of years and is closely linked to the development of agriculture and Western civilisation. The oldest evidence of the domestication of grapevines and winemaking dates back to more than six thousand years BC to
present–day Georgia. As early as prehistoric times, wine was already produced in the area of present–day Slovenia too, which is evidences by a vine leaf relief discovered on the hillside of the Rifnik hill near the town of Celje.

The method and phenomenon of white wines produced through prolonged maceration of grape skins (orange wines) was revived in the 1980s by the winemakers from Oslavje (Oslavia) headed by Joško Gravnar and Stanko Radikon, followed not long after by winemakers throughout Slovenia and across the globe.
The production of macerated white wines is increasing year by year, and the news of how special they are has spread all over the world.

Our wine list contains some excellent wines produced by following the biodynamic wine production practices. The founder of the biodynamic approach to agriculture was
Rudolf Steiner (1861–1925). According to his ideas, a vineyard is not merely a plantation of grape–bearing vines, but an organism, a self–contained entity guided not only by the principles of the mineral world, but also by the principles of life, astrality and spirituality. Aided by the sun and water, energy travels from the earth through the grapevines, before ending in our glasses as living wine.

We also have several wines with no added sulfites to choose from – they have been marked as ‘no sulfites added’.
